Multitrack recording

Multitrack recording keeps each source — each voice, each instrument — as its own synchronized track rather than mixing to one file at capture time.

Separate tracks mean one speaker's cough can be cut without touching another's sentence, levels balanced after the fact, and per-speaker transcription with perfect attribution. Storage is the only real cost.
